Taste of Kingston | Mac n Cheese


My love affair with mac n cheese started in the good old days of university where I wanted a quick meal. I could not stand Kraft Dinner as it truly upset my stomach but thanks to Campus One Shop, a gourmet grocery & convenience store on my way home from campus, I was introduced to Annie's Shells & White Cheddar while browsing an aisle one day. That's where an appropriate "uh-oh" can be said. It just went downhill from there. Late night study sessions and group work, meant whipping out a box of Annie's. I 'indulged' on Annie's Shells & White Cheddar. To my amazement it was made of 100% real cheese and organic ingredients as well as easy to make. Fast forward four years, my love of cheese and pasta has grown significantly and of course, there's no calorie counting when it comes to mac n cheese. I have found an amazing recipe for mac n cheese thanks to my partner and no longer resort to a packet of cheese mix! This gal can now make her own cheese sauce from scratch and does not skimp out on the cheese. A blend of extra old white cheddar and gruyere is my favourite.

Cheesey, gooey, warm blanket of comfort that a good mac n cheese provides is simply heavenly. Though I do not make this dish on a regular basis, I am obsessed! So when going out, it is always a delight to see what chefs come up with as each one is always unique. Being in the city of Kingston, the possibilities are endless - these are some of the mac n cheese dishes I have had the pleasure to indulge in:

Macdonald Macaroni & Cheese
Baked macaroni & cheese with crispy bacon, diced onions & peppers, chili flakes and toasts.

Lobster Bisque Mac 'n Cheese 
Lobster cream, local curd, romano and gruyere cheese with mezze rigatoni baked au gratin.

Aztec Mac & Cheese 
Pasta tubes married with the Mansion's three cheese cream sauce, salsa and ground beef. Served with home-styled garlic bread.

Note: The Aztec Mac & Cheese is no longer served as of January 2016 BUT! Here are two new dishes that you are sure to love: 

Buffalo Wing and Blue Mac & Cheese
Farfalle Bowtie Pasta, local seasoned beef tossed in a white wine and shallot three cream sauce with a baked panko bread crumb and blue cheese crust.

Mansion Mac & Cheese
Farfalle Bowtie Pasta, BBQ sauced pulled chicken tossed in a white wine and shallot three cream sauce with a baked panko bread crumb and black river cheddar cheese, topped with homemade salsa.

This next dish, technically does not constitute as a real mac n cheese but it is literally the only item I'll get at Jack Astor's as it is doused in a savoury creamy cheese sauce.

Asiago Chicken Bowties
Fresh chicken breast, grilled with an Asiago cheese crust. Served on bowtie pasta tossed in a creamy cheese sauce with semi-sun-dried tomatoes.

Kingston's culinary scene has welcomed so many unique businesses with a twist these paste few years - MltDwn and Farm Girl Foods are prime examples. One a mortar and brick restaurant located on Princess Street specializing in gourmet sandwiches, while the other a food truck situated in City Park doing quality comfort food with a seasonal twist. The next two are mac n cheese dishes are a true Kingston twist!

Mac 'N Cheese Fritters
A blend of 3 cheeses, breaded in a panko herb crust and lightly fried. Served with spiced ketchup.

Though not in Kingston but a mere 20 minutes away, the Socialist Pig in Gananoque has to be given honorary mentions for their mac n cheese made with american cheddar and heavy cream! It always satisfied my lunch time craving.

The Keg
Oven baked elbow macaroni pasta in a rich cheese sauce. Topped with Dungeness crab and finished with grated Parmesan.
