Fluffy Blueberry Pancakes


Who doesn't love a good brunch on the weekends! I know I do especially when I sleep in and am looking to treat myself that day with items I bought from the local farmers' market.


This week: Blueberries! 


INGREDIENTS 

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
3 tablespoons butter, melted
1 large egg
1 1/4 cups milk

Butter to grease skillet.

INSTRUCTIONS

Combine together flour, baking powder, salt, and sugar in a large bowl.

Whisk in melted butter, egg, and milk until combined. Let batter rest for 5 minutes.

Preheat a large skillet over medium-high heat. Coat skillet with small amount of butter to prevent the pancakes from sticking. Pour batter into the hot skillet, about 1/3 cup of batter for each pancake. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 minutes.

Plate and serve!

Fall Staples



Fall is right around the corner and working in retail and fashion, I am already previewing fall fashion and simply loving it all, as it is my favourite season to dress for. I can't wait for the never ending summer heat and humidity to be gone. I typically start shopping and reorganizing my closet mid August and come up with a shopping list of must haves for the next season. Don't get me wrong, summer is great but I have sweet spot for all things cozy and being a realist, those leaves will be falling off those trees any day now.
