When it comes to the weekend, I always look forward to making something scrumptious in the morning for brunch. A fan of eggs benedict's, waffles and of course pancakes, I thought I'd mix things up with a healthy version!
Ingredients:
2 cups all purpose flour
2 cups old-fashioned rolled oats
1/4 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon cinnamon
1 teaspoon salt
2 cups milk
2 large eggs
1/4 cup vegetable oil
Steps:
Combine flour, sugar, baking powder, salt, cinnamon and 1 cup of oats. Mix until coarsely grind oats. In a large bowl, whisk together milk, eggs and oil. Add dry ingredients and the remaining 1 cup of oats and whisk until moistened.
Final Step:
Lightly oil preheated skillet or griddle. Spoon out 2-3 tablespoons of batter and drop. Remember to keep them on the smaller side as they are easier to flip. Cook until a few bubbles burst, usually 1-2 minutes. Then flip carefully with a spatula and cook until browned on the underside, another minute.
Makes 7-8 pancakes.
