Fall is officially upon us - woo hoo!
To celebrate, I am sharing a quick and easy cornmeal muffin recipe. These slightly sweet muffins are the perfect accompaniment for breakfast, brunch or on the go for a busy bee like myself as well kids!
Fun tip: add fresh blueberries or raspberries for added sweetness! Though to keep it on the savoury side, make some chili or pulled pork!
INGREDIENTS & INSTRUCTIONS
3/4 cup sugar
1 cup flour
1 1/2 cup cornmeal
3 tsp baking powder
1 cup flour

1/4 tsp salt
1 tsp honey
1/2 cup oil
1 tsp honey
1/2 cup oil
1 cup milk
INSTRUCTIONS
In a large bowl, mix together corn meal, flour, sugar, baking powder and salt. Add egg, oil, honey and milk; stir gently to combine. Spoon batter into prepared muffin cups.
Bake at 350 degree F for 15-20 minutes or until lightly golden brown and let cool for 10 minutes.
